Healthy Matcha Pancakes

Hello beauties,

Low key - I love pancakes. And I basically haven’t eaten them in YEARS because I always opted for the egg option when it came to breakfast food. But now that I am giving up dairy for the Breastie Vegan 10 Day Challenge it has gotten my creative juices flowing and I am ALL ABOUT these dairy free matcha pancakes! Honestly I couldn’t even tell the difference if you paid me.

These pancakes are SO fluffy and delicious. They are vegan, have no added sugar, and MADE MY MORNING SO HAPPY. I put mine in the fridge and ate them for three days in a row soooo…. yeah pancakes are back in my food pyramid full force.

If you don’t want to participate in the challenge and just want to enjoy these pancakes - that’s cool too!! Also if you’re feeling healthy-ish I am NOT judging and you can totally use real eggs and add in some sugar/ chocolate chips because that will seriously take these pancakes to the next level. But they are definitely good exactly as is below:

Ingredients:

  • 1 cup almond flour

  • 2 ‘flax eggs’ (2 tbsp ground flax, mixed with 6 tbsp water)

  • 2/3 cup unsweetened vanilla almond milk

  • 1/4 cup coconut oil

  • 1 teaspoon vanilla or almond extract

  • ¼ cup ground flaxseed (separate from flax eggs)

  • 2 tablesppons of matcha powder

  • 1 teaspoon baking powder

  • handful of chia seeds

  • sccop or almond or peanut butter

  • 10 pitted dates

Instructions:
Step 1: combine the ‘eggs’, almond milk, coconut oil, and vanilla into a large bowl.
Step 2: in a separate bowl - combine almond flour, dates, matcha powder, baking powder, flaxseed, and chia seeds.
Step 3: pour the dry ingredients into the bowl of wet ingredients. Add in peanut or almond butter!

Step 4: Whisk or blend until smooth and fully mixed.
Step 5: line pan with coconut oil. I use spray coconut oil from Trader Joes! Its amaze.

Step 6: pour batter into the pan. I am a slowpoke and like to do each pancake one at a time lol.
Step 7: When your pancake starts to bubble and the bottom firms, TIME TO FLIP!!
Step 8: Cook on the opposite side for another minute or so!

I ate mine this morning while watching a TED talk and it put me in the absolute best mood!! I highly recommend. Also… I added some extra almond butter and strawberries on top and it was EVERYTHING. If you end up making these give me a shoutout on Insta!! I am thinking about starting the hashtag #PPeats unless someone can come up with something better/more creative!
