Healthy Halloween Brownies

Hey babes!!

I absolutely LOVE Halloween and I am SO excited to spend the night watching Hocus Pocus, eating pumpkin soup, lighting my pumpkin candles, and finishing the night off with these delicious healthy brownies. Alright alright - I am officially the most basic witch out there.

These brownies are SO melty and delicious. They are vegan, have no added sugar, and legit melt in your mouth. They taste even better on day 2 and day 3 in my opinion!! It might seem weird to be eating black bean brownies - but if you can get over the fact that it’s beans and just ENJOY how delish they are - we are in business!

If you don’t want to participate in the challenge and just want to enjoy these brownies - that’s cool too!! Also if you’re feeling healthy-ish I am NOT judging and you can totally use real eggs and add in some sugar/ chocolate chips because that will seriously take these brownies to the next level. But they are definitely good exactly as is below:

Ingredients: 
• 1 can of black beans, drained & rinsed
• 10 pitted medjool dates
• 1/2 cup raw organic cacao powder
• 1/2 cup tahini
• 1/2 cup gluten-free oats
• 1/4 cup ground flaxseed (separate from the flax egg)
• 1 cup water
• 1 cup almond milk
• 1 “flax egg” (1 tbsp ground flax, mixed with 3 tbsp water)
• 1 1/2 tsp baking soda
• 1 tsp vanilla or almond extract 
• 1/2 cup chia seeds 

Instructions: 
Step 1: Preheat your oven to 350 degrees Fahrenheit.
Step 2: Make your flax egg by mixing 1 tbsp flax seed with 3 tbsp water. I set it aside and let it sit for a few minutes! 
Step 3: In a large bowl I added the dates, cacao powder, chia seeds, oats, tahini, vanilla or almond extract (I used both because YOLO) the drained beans, flaxseed (not the flaxegg) water and almond milk. Blend everything together until its super smooth. 
Step 4. Add in your flax egg and baking soda and blend again. I made sure it was really smooth!! 
Step 5. pour the batter into a non-stick brownie pan and pop into the over for 20 minutes! 
Step 6: stick a knife in it to see if its ready! If the knife has batter on it – its not ready! IF the knife comes out clean, THEY ARE READY!!!!!! 
Step 7: take the brownies out of the oven and let them cool for 15- 20 minutes. I popped mine in the freezer for 10 min as well! 
Step 8: Slice them up, drizzle with some extra tahini on top (it kinda makes them look like mummies - right?!) and ENJOY!!!! I added some vegan ice cream on top last night as well – because TREAT YOSELF!!!!
